What You'll Need

Ingredients:

  • 1 cup oat flour
  • 1/4 cup almond meal
  • 1/4 cup gluten-free all-purpose flour (we recommend Trader Joe's brand)
  • 1/2 cup coconut sugar
  • 1 ripe banana
  • 3/4 cup unsweetened almond milk
  • 1 tablespoon baking powder
  • 1.5 teaspoons vanilla extract
  • 3/4 cup vegan dark chocolate chips

Directions

  1. Preheat your oven to 350 degrees F.
  2. Combine the ripe banana, almond milk, vanilla extract, and coconut sugar in a blender. Blend on high until the mixture is completely smooth.
  3. In a large bowl, whisk together the oat flour, almond meal, gluten-free flour, and baking powder. Then, pour the wet mixture into the bowl and stir to combine thoroughly. Gently fold in 1/2 cup of the dark chocolate chips.
  4. Fill each muffin cup in your pan approximately 3/4 full with the batter. Sprinkle the remaining chocolate chips on top.
  5. Bake for about 22 minutes, then allow the muffins to cool in the pan for 30 minutes before removing them.
